Priscilla’s Palate: Pesto Pasta Salad

Try a refreshing summer pasta salad. This salad is nutritious, high in fibre, and perfect for warm weather!

It makes a great side to any dish, or a base to a main meal.

Serves: 1

INGREDIENTS:

  • 1 cup wholemeal pasta cooked
  • 20-30g grilled halloumi cheese
  • 1 cup steamed broccoli
  • 1 tbs grilled pine nuts to your liking


Pesto Dressing

  • Fresh basil – 1 cup chopped
  • Pine nuts – 1 tbs
  • Olive oil – 3 tbs
  • Parmesan – 20g
  • Garlic – 1 clove
  • Lemon and salt to taste

 

METHOD:

  1. Cook the pasta and allow it to cool
  2. Grill Halloumi cheese
  3. Steam broccoli
  4. Grill pine nuts
  5. To make pesto, blend basil, pine nuts, olive oil and parmesan together to create a paste
  6. Mix all ingredients together- toss and enjoy!
  7. Add lemon to your preference

 

Note: You can also add Chicken or another protein source.
