As the weather warms up, this noodle salad bowl is an easy meal prep recipe for lunch or dinner. Change up your favourite vegetables, dressing and protein source (beef/chicken/tofu/fish) for endless variety.
Meal prep tip – cooking the protein source earlier in the week means this noodle salad bowl can be made in a few minutes on busy days.
INGREDIENTS:
Salad:
- 1 individual serve rice noodles (40g)
- 1 cup mixed lettuce leaves
- ½ red capsicum
- 1 baby cucumber
- ½ cup rainbow salad mix
- ¼ cup fresh broccoli
- 20g avocado
Protein:
150g grilled chicken breast (cooked in pre-made lemon grass marinade)
Dressing:
*add ingredients to taste
Lemon, salt, coriander, chilli, olive oil
METHOD:
- Spray olive oil spray in pot and grill chicken until cooked through. Add pre-made lemongrass paste and seasonings while cooking.
- Place noodles in boiling water for 2 mins or until cooked.
- Set up bowl with vegetables and add noodles and chicken.
- Add dressing and garnish with coriander.
- Mix well and enjoy!
