Keep the summer vibes going with this refreshing and nutritious grain salad.
Whole grains provide carbohydrates for sustained energy along with fibre to support digestion and gut health.
High in fibre and protein, this salad makes a great side to any dish, or a base to a main meal.
INGREDIENTS:
Salad:
- ½ cup lentils
- ½ cup black rice
- ½ cup pearl couscous
- ½ cup quinoa
- ½ cup corn
- ½ cup diced beetroot
- Baby tomatoes
- Cucumber
- Red onion
- Dried cranberries
Dressing:
- 1tsp Sumac spice
- the juice of 1-2 Lemons
- 1tbs Olive oil
- 1tbs Pomegranate molasses
METHOD:
- Cook all the grains and allow them to cool
- Mix dressing ingredients together
- Mix grains with salad vegetables and add dressing
- Toss and enjoy!
