Cooking With Kristen: Iron Loaded Energy Balls

Feeling low in energy? . . . Want a nourishing snack? . . . Give these a go!

If you’re looking for an easy and quick whip-up everything in the pantry snack, these are it.

Everyone in the family is guaranteed to love them. The addition of cashews, pumpkin seeds, dried apricot, and sesame give them a boost of iron making them the perfect snack for those who are deficient. 

INGREDIENTS:

  • 3/4 cup raw cashews 
  • 1/3 cup pumpkin seeds 
  • 1/4 cup hemp seed 
  • 1 cup dried apricots 
  • 1/2 cup tahini 
  • pinch of salt 
  • 1 tbsp organs powder (I use cellsquared) 

METHOD:

Whiz up in a blender then roll into balls and coat in sesame seeds. 

Store in fridge for up to a week. 

If you want to take them to the next level, you can coat them in white chocolate!
