The gut is central to a number of systems within the body. The microbes (good bugs) within our digestive system are involved in immune function, hormone metabolism, absorption of nutrients, inflammation and detoxification pathways.
Did you know that when you cook then cool potatoes they produce something called RESISTANT STARCH. This starch ferments in the gut and forms prebiotic fibres which feeds the good bacteria within the gut encouraging a more diverse microbiome = better overall health!
I add tinned mackerel which further supports the gut through its anti-inflammatory properties and amino acid profile. The addition of protein is great for supporting appetite and keeping you feeling full for longer. Tuna and salmon also work well in this salad.
Serves: 1-2
INGREDIENTS:
- boiled potatoes, cooled (leftovers work great here!)
- spring onion
- parsley or celery leaves
- dill
- tin of mackerel (preferably in olive oil or brine)
DRESSING:
- 3 Tbsp Greek yoghurt
- 1 Tbsp bone broth mayo or
- Whole egg mayo
- 1 tsp mustard
- 2 Tbsp Apple cider vinegar
- Salt & Pepper
Combine dressing ingredients then add to roughly chopped potatoes, herbs, and tinned fish.
Can be stored in fridge for up to 3 days or longer without the dressing.
